So I’m working 4 shifts for this week and was thinking what to make for lunch this time. In Norway, eating out all the time is like a death sentence for your bank account, so making your own food is just better lmao. Last week I made a delicious creamy chicken pasta with salad which you can check here!

This week I’ll be making homemade pizza; pizza is one of those foods you can have so much fun with as you can decide all the toppings and experiment with many different things. My family and I LOVE making homemade pizzas, that’s kind of our thing. And we go all out! I’m talking beef, blue cheese, artichoke (not all together, but who knows that could be good…)

Today we’re making a simple chicken pizza with sweetcorn, onion, mushrooms and spinach. I would normally add more ingredients like meat and vegetables but I was on a small budget. (That also means I didn’t actually make the pizza dough from scratch but here in Norway, readily made pizza dough is so accesable and common to buy). I promise I’ll make an ACTUAL homemade pizza one day and post it on here!

INGREDIENTS:

  • large pizza base – enough for two days
  • tomato sauce – can be either shop bought or you can mix tomato puree with ketchup and spices 🙂
  • chicken breast
  • red onion
  • sweetcorn
  • mushroom
  • spinach
  • mozerella
  • pizza sauce – in norway you get a pizza dressing made to put on top of pizza, like sour cream

METHOD

  1. First preheat your oven to 180C, so that gets nice and toasty while we’re preparing the filling
  2. Heat up a pan on medium heat with a drizzle of oil. Slice your chicken breast and fry, season with salt, pepper and garlic salt. Once almost cooked, transfer to a bowl and add an knob of butter into the pan
  3. Slice your onion and mushrooms and fry in the pan until softened and browned
  4. Add in the sweetcorn and spinach and fry for a futher couple of minutes, and then get the chicken back in and mix all together – turn of the heat
  5. Spread out your pizza dough on a baking tray and cook for a few minutes first – this is so it can get nice and crispy
  6. Take it out of the oven, smear a nice layer of tomato sauce all across the base all the way to the edges
  7. Spread your filling on the base and finally a generous amount of cheese as the cherry on top
  8. Cook until the cheese has melted and the edges are crispy and there you have it, a tasty pizza cooked within 30 minutes!

I cut it up, put in my lunchbox and just brought the whole tub of pizza dressing to work. It’s healthy, filling, not expensive to buy and takes little time!
